Cinnamon Chip Silver Dollar Pancakes
What says weekend breakfast more than pancakes?
Wayman’s Corner Bed & Breakfast of Greenville, Ohio received an honorable mention
for Vicky’s recipe of Cinnamon Chip Silver Dollar Pancakes that include cinnamon chips from King Arthur Flour.
Cinnamon chips are available from King Arthur 800-827-6836 or locally from The Flour Barrel
2 cups Flour
2 tablespoons Brown sugar
2 teaspoons Baking powder
1 teaspoon Baking soda
1/2 teaspoon Salt
1 cup Sour cream
1 1/2 cups Buttermilk
1/4 cup Melted butter
1 cup Cinnamon Chips
2 Bananas – one for batter & one for garnish
1 cup Finely chopped walnuts
Preheat oven to 375.
Whisk together flour, brown sugar, baking powder, baking soda & salt. Mix in cinnamon chips and make a well in center of bowl.
Whisk together eggs, sour cream, buttermilk & melted butter. Add to dry ingredients and stir gently with a wooden spoon just until ingredients are mixed – don’t over mix!
Gently stir in one thinly sliced banana and chopped walnuts.
Refrigerate for 60 minutes before frying in hot oil on a griddle or in a frying pan. Drop using scoop that holds approximately 3-4 tablespoons batter. (I use the large Pampered Chef scoop that holds 3 tablespoons and make it heaping – the perfect size!)
Serve with whipped cream, banana slices, finely chopped pecans and syrup.
